May Rain | Reign | Poetry From The Fields | Yet Another Refill
The story of the reign, as told to the farmer, by the rain.
Mystical, yet you can see it coming.
To work the fields before, during or after the humming
Questions asked by the farmer
Responses in thunder
Often times I wonder
Whats the best method, to express words on my chest
As I'm gardening, working the land to get more, no less
The signs come clearly, as the rain comes down.
Looking at the terrain, after the rain, it's still dry ground
What lies ahead of me is a mountain not a mound
Think this is profound?
Have a sip with me, take a sit down
Think about it, you can prepare for the rain, doesn't mean she'll come
Work your crops too early, and it will have to be redone
Working out in the rain, you may think this is no fun
After the rain is gone, you may get too little or not enough sun
No guarantee on the seeds we sow
We must due diligence, in order for them to grow
That means improvising, adapting to change
So that one day we can reign
What that means to a farmer, is that we all possess the power to make it rain more or less
What matters in your time, is that you give it your best
Now go make it rain, thunder, lighting, no less

What inspired you in becoming a Barista?
I like machinery, was intrigued by the espresso machine in a friends internet cafe.
What does it take to be one?
First and foremost it takes openness, to become a barista it takes patience, and willingness to express oneself to others. A true barista is an artist at heart and can compose drinks based on the energy between the drinker and artist.
Are you planning in participating in a competition?
At this time have no plan of a competition, I have
been putting all my energies into my micro pan roasting, and coffee consulting business.
What advice or tips can you give for Baristas just getting started?
Patience, practice makes perfect, don't be afraid to try new formulas
Do you have any other interests outside the coffee world?
Outside the coffee realm my interest include travel, farming, martial arts, calligraphy, & extreme computing :D.
What type of coffee blend can you suggest to our caffeinated readers?
Hawaiian Kona ~ Ethiopian ~ Kenyan ~ Costa Rican ~ These are my personal favorite!

Don Francisco's | Gavina Gourmet Coffee | Old Havana Espresso Coffee Pods | Coffee Notes
Good day sippers!
Today I will be sharing with you some coffee notes from a coffee company by the name of Don Francisco's. I will share with you my personal findings of their Gavina gourmet coffee line. These notes are specific to the ESE pods, also know as Easy Serving Espresso. The particular cafe we will report on is their own personal family blend "Old Havana" espresso.
This is what Gavina says about their espresso
Old Havana Espresso was created by our master roaster in the old country, following our family's 135 year tradition of roasting authentic Cuban espresso. Sip it rich, short and strong — add a cube of sugar to sip it Cuban style. Packed airtight for freshness
I tested this espresso over a three month span. Shows how rigorous and serious our test are here at #BODY bean development & @CushCoffee Labs. The purpose of these tests were for 1st and foremost,quality, then for consistency.Of course it would have been harder to test had the espresso been in regular bean packaging. Each espresso pod is packed individually for maximum freshness. That's what the product promises to deliver.
Inspection of the packaging
The packs are sealed airtight, no degas valve of any sort.The pack also has some play in it, where it's not completely flat there is gas from the ground coffee within the pod.There was no indication on their website that they packed the pods with other gas to stabilize or maximize the freshness or shelf life. Coffee can give off gases weeks after it has been roasted. Before I get too technical, let me get to my coffee notes. Let's talk delivery and taste.
Upon opening each pod pack I did an inspection for aroma consistency. I picked up light spice aroma, as well as citrus and heavy cherry on the fragrance. These notes were consistent throughout my three month testings. It's safe to say in the fragrance/aroma department the espresso delivery was consistent, time after time.
Appearance
Everyone in the coffee world says the perfect espresso should be a balance of creama and taste.
For those unfamiliar, creama is the actual top layer of foam created in the espresso brewing cycle. Also this is to be the mark of what espresso is, so no creama, no espresso or bad espresso. I'm no espresso expert, just saying what the professionals say. With that being said all of the shots I pulled delivered a smooth velvety well textured bronze creama. It is also safe to say that this espresso passed in the delivery of appearance.It looked like an espresso. Personally I'm about the taste. Let's get down to the sip!
Taste
The cup aroma mimicked the dry pod smell test, only a bit more intensified. The fragrance held that citrus smell, as well as the cherry and light spice, even got a bit of caramel in the nose.
The sip was very alive - a nice citrus zing that makes you get goose bumps upon sipping it. Not to mention it has a mouth watering element when combine with the cherry flavor. It really makes you think. Cherry, lemon yes a sweet, cherry, lemon, light spice with hidden caramel complexities. A nice balance of flavor contrasts that compliment the cup. This is not your "standard" dark roasted, burnt, smokey espresso. This one has character and is packed conveniently in an ESE pod for your travelling or just for an easy clean up at home.
Recommends
I would highly recommend this espresso for someone who is looking for something different,or change in taste profile from your "standard normal" espresso. You can't beat the quality and convenience of this espresso pod. Trust me, I know my stuff, take my word. I only mention this, because I know there are critics out there who challenge the science of ESE technology. It's as consistent as it gets - never over or under extract again. I also challenge anyone that has a home espresso machine that is ESE compliant to try them. I'll even send you a couple for free to try and comment back here with your results. Lastly, I would like to say I smoke a cigar occasionally and love pairing with a variety of coffees. I recommend this espresso blend to my cigar lovers. This pairs great with medium cigars, add a dash of sugar and you'll be transported back to "Old Havana" Best of all, it does come in whole bean form as well!

Good day sippers!
Today I bring to you a coffee that is no stranger to the coffee world, it's Kenya AA+, a coffee that is from one of the top 10 coffee growing regions. Kenyan coffee is known for it's wine characteristics, citrus (grapefruit) bliss and chocolate nuances. More importantly it's known for the strict processing guide lines. You can almost bet on the label, if it says Kenya, it's gonna be a a great experience provided it has been roasted properly. The mills do everything possible to ensure they are delivering quality coffee to the consumers. Let's say once the coffees get the grade, they are processed accordingly. Kenya also has some of the highest priced coffee lots, if that says any thing about their hard work and great tasting coffee. Lets get into some coffee notes shall we?
I roasted this Kenyan on the 18th of this month. Kenyan coffee has a nice range for roasting. Depending on your palate you can easily roast a medium to a dark roast, and have a satisfying cup of coffee. I took this coffee right up to the 2nd crack to unleash the power of the sweet pot! I sometimes roast well into the 2nd crack which makes for a great single origin espresso. Other roast levels can be used as espresso as well, just depends on how much you like to squeeze your citrus! Yes this is an alive coffee that will wake up the sleepiest palate.
Our method of brew madness was the French press, with a steep time of 5mins. From the bag, the beans had a nice sweet, nutty toasted smell. The appearance was medium dark, with slight oil on the surface. After grinding the beans, we got a nice dark berry aroma, along with a some mouth watering citrus smell. After we poured water of the grounds, we got even more intense berry, citrus and some sweet caramel, that kept things interesting.

CAO La Traviata Maduro Meets CushCoffee Kenya AA+
Last Week I Received 2 CAO La Traviata Maduros From Bob At Stogie'D . I Won Them In A Free Cigar Contest That Is Held Weekly On The Site. After Seeing Bob's Review On The CAO La Traviata, I Kinda Got A Feel Of What I Should Be Expecting. Being A Coffee And Cigar Pairer, That Meant Less Research Work For Me. As With Coffee, Cigars Have Certain Flavors N Nuances That Can Be Detected, And Make For A Great Experience When Paired With Coffee Or Any Other Beverage, When Given The Time To Relax And Reflect On Life.
On With The Review, I Did A Pre-Smoke A Couple Days Ago, Just To Make Sure I Would Pick Up Certain Notes, To Be Paired With My Perfect Weapon Coffee. The Cigar Had Very Little Oil On The Wrapper, Everything Was Well And In Tact, As A Good Cigar Should Be. I Noticed Very Little Defects In The Wrapper Itself. The Wrapper Had Nice Veins. The Cap Remained In Tact As I Cut, Which Shows Great Craftsmanship Of The Cigar, Also Means That When I Received My Stogies They Were Still Fresh, And Not Dried Out.
At First Light The Cigar Had No Burn Issues What So Ever. I Will Say Boy Was That First Draw Powerful, And Full Of Flavor. I Got Some Spice From The Taste Of The Wrapper, Then Peppered With A Nice Full Mouth Of Smoke. I'm Thinking At This Point If Things Get Any Stronger I'm Not Gonna Be Able To Hold On. I'm By No Means A Cigar Professional, I Just Grew Up Growing It, And An Occasional Smoke Here And There. Throughout The Cigar The Flavor Was Consistent, A Definite Pepper, Spice, Some Hints Of Cocoa, In The Beginning A Cold Draw I Got Some Caramel, Or Something Similar A Sweetness For Sure.
I Decided Right Off To Pair With My Own Cush Coffee Kenya AA+ Coffee. I Figured After Hearing Bobs, Review, And Seeing What A Few Others Had To Say, Kenya Would Be The One Coffee To Stand Up To The Challenge. Keep In Mind I Wanted Something To Compliment This Cigar, I Knew A Light Coffee Or A Coffee That Wasn't Bold Wouldn't Stand A Chance. I Fresh Roasted A Batch Specifically To Pair With My CAO. One Word To Describe Kenyan Coffee Is Citrus, It Has A Grapefruit Like Acidity That Can't Be Mistaken, Also Depending On The Roast You May Detect Chocolate, Fruits Among Other Notes That Can Change Season To Season Crop To Crop.
Now I Decided I Wanted To Try The Kenyan As An Espresso Drink, Because I Knew It Be Strong In Flavor, Being That It Was Just Roasted.So For The 1st 3rd Of The Cigar I Enjoyed A Triple Long Espresso With The Smoke, I Have To Tell You It Was Quite The Experience! The Acidity And Citrus Play Amplified The Pepper In The Smoke, So I Was On Fire! I Love Spicy, But This Was Unexpected, I Totally Did Not Compensate For The Citrus Play In The Kenya WHOA! Good For Me I Had Already Planned Out How I Wanted My Sipping To End. I Asked My Wife To Brew A Regular Pot Of Kenyan AA+ After I Had Been Outside About 20mins.
Now It's Time For The Coasting, Or Cruise Control.The 1st Part Of The Ride Was Exciting, So I Was Ready To Shift Gears.The Cigar Remained About The Same As Far As The Flavor Was Concerned, Very Consistent. The One Issue I Had Was A Slight Uneven Burn On The 1st And Last 3rd Of The Cigar. They Both Seemed To Work Themselves Out, So I Guess Thats No Big Deal.
The Drip Pot Of Kenyan Was Definitely More Mellow, Than The 3Shots, I Detected More Fruits In This Cup, Still Had A Nice Acidity, The Taste Of Fresh Grapefruit, Just A Hint Of Earthiness. All In All The Drip Coffee Really Complimented The Cigar The Best, As It Didn't Heighten The Experience Of The Cigar, They Both Stood On Their Own, Which I Feel Was Great. Near The End Of The Smoke I Felt That It Really Mellowed Out, And The Mouth Feel Was More Velvety, Just Softer And Pleasant. I Can Say That The Experience Was A Great One, Never A Dull Moment. Just Like A Great Movie, The Combination, Had All Of My Attention. I Would Definitely Smoke This Cigar Again, Also Would Recommend It After Lunch Or Dinner, Make Sure You Have Something On Or In Your Stomach If You Are A Light Weight Like Me. Now It's Time For The Coasting, Or Cruise Control.The 1st Part Of The Ride Was Exciting, So I Was Ready To Shift Gears.The Cigar Remained About The Same As Far As The Flavor Was Concerned, Very Consistent. The One Issue I Had Was A Slight Uneven Burn On The 1st And Last 3rd Of The Cigar. They Both Seemed To Work Themselves Out, So I Guess Thats No Big Deal.
The Drip Pot Of Kenyan Was Definitely More Mellow, Than The 3Shots, I Detected More Fruits In This Cup, Still Had A Nice Acidity, The Taste Of Fresh Grapefruit, Just A Hint Of Earthiness. All In All The Drip Coffee Really Complimented The Cigar The Best, As It Didn't Heighten The Experience Of The Cigar, They Both Stood On Their Own, Which I Feel Was Great. Near The End Of The Smoke I Felt That It Really Mellowed Out, And The Mouth Feel Was More Velvety, Just Softer And Pleasant. I Can Say That The Experience Was A Great One, Never A Dull Moment. Just Like A Great Movie, The Combination, Had All Of My Attention. I Would Definitely Smoke This Cigar Again, Also Would Recommend It After Lunch Or Dinner, Make Sure You Have Something On Or In Your Stomach If You Are A Light Weight Like Me. A Reflection Of My Coffee ~ A Better Understaning Of Ur BODY~
People coffee for many different reason. I for one coffee 1stly for myself, because of my love with not so much as the beverage in itself, but it's very existence as a bean(being). Everything in the world has a purpose, no matter how big or small one thinks of another persons purpose. We all exists to fulfill our very own purpose. Sometimes along the way of fulfilling our purpose we are accompanied by people or things along our journey to fulfillment.
Coffee for me is my conduit.My ultimate goal of helping as many people along my journey as possible coffee is my voice as I am its voice, we are one in the same as a complex bean a complex BODY that both have purpose. As with many things in life people tend to have hobbies pastimes or just things that intrigue them to want to know more about an element of life. I find that as a blessing and a curse all in the same, some people because of excitement, new discovery or personal reasons and hastiness may voice an opinion about coffee or whatever their passion is without fully understanding. Which can lead to misinformation. Misinformation in my passion (Coffee) is unacceptable, kinda like think before you speak.
You will hear this many times. This is not my hobby. This is not a get rich quick. To me it's a business, a business of my life and my purpose. Coffee is my conduit and I embrace coffee because it's also my testimony. Tread lightly when you talk about coffee for it is sensitive to all the elements in life as I am as well. I may be inclined to protect my sacred means of communication with all mankind. Nothing hurts coffee more than misinformation,and hype, coffee is simple yet complex. Analyze your purpose in in life in coffee. I say this to brokers, buyers, roasters, reviewers, an everyone in between if this is not your passion, I will exploit you and run you off the face of coffee.If you are unsure about something in coffee, ask, ask many questions there are no dumb questions. When coffee is misrepresented it hurts us all in the end. I am here to defend coffee, and all that it cant do for itself. Keep your hobbies at home. Coffee is my home, I'm here to educate all that want to learn. That's what the BODY is all about, please know this.

I Received A Special Coffee Package 2 Weeks Ago, It Was Marked Exclusive So My 1st Thoughts Were Do I Want To Open This Coffee, Or Just Keep It For My Daughters To Enjoy It In The Original Package? To Be Able To See Where And What Coffees Their Dad Had Traveled Along His Journey. It Wasn't Long B4 I Thought, Well After Coffee Is Roasted It Doesn't Age. The Quality Decreases, Because It's Perishable Like Any Other Consumable. I Tried To Think Of Who I Could Share This Coffee With Because My Wife, N Daughters Are Out N Denver Visiting Family, Not To Mention All Of My REAL Coffee People Are Miles Away.O.K Enough Of The Coffee Grounds Lets Get Down To The Coffee, After All That's What We're Here For Right? For Starters This Company Needs No Introduction Gavina & Sons I Received A Coffee From One Of Their Labels " Don Francisco's " Panama Diamond Mountain. What Makes This A Special Treat Is That This Coffee Is An Exclusive Offering Of Limited Quantity & Quality. This Coffee Was Produced By Hacienda La Esmeralda Outside The Town Of Boquete, Grown At Over 1400 Meters N Rich Volcanic Soil. I Receive Information About This Coffee And What Makes It So Special. I Have To Agree With The Notes I Had Been Given, This Coffee Is Definitely A Complex Coffee. Nice Aromatics As It Suggested, But Also A Natural Sweetness, Very Pleasing Acidity. Had A Really Nice Light Spice To It, If U Can Find It It's A Must Try Coffee REAL Talk! Of Course When I Received The Coffee Naturally I Would Think It Was All HYPE. This Is Sunday Confessions :I Was Wrong , No HYPE ,No BITE~ Mike Gavina Told Me To Make Sure I Tried This Coffee As A Regular Drip, Because Of It's Natural Sweetness That May Have Been Missed If Using Another Method Of Brewing.
This Brings Me To Say, Not Only Did That Show His Level Of Confidence In His Roast, But Also As Some May Not Know That Ur Brewing Method Is Just As Important As Ur Roasting Methods. If You Under-grind Or Grind To Fine, Mix That With An Improper Method, You Could Completely Miss The Whole Experience. I Know This Because This Is What I Do. I Test Beans Through My Very Own Methods. I'll Save This For Another Posting. The Same Way Roasting A Coffee To A Profile To Get A Unique Flavor Or For Better Words To Get The Best Out Of The Bean, A Roaster Must Try Different Roasts And Compare Notes. This Coffee Was Roasted 3 Different Levels, And Graded By 5 CQI Cuppers The End Result Was a City Roast (Medium).
Because This Coffee Was So Exclusive I Wanted To Try At Least 5 Brewing Methods, Just For My Own Pleasure. I Tried Espresso, Pour Over Drip, Pour Over Drip With Filter, Regular Drip, N Also My Very Own Open Cup Method. My Personal Favorite Methods Were My Open Cup N Also Regular Drip, As Mike Had Suggested. I'm A Believer In Mikes Passion N Degree Of Roasting Expertise He Nailed This Coffee.I Say That To Say The Least I Have Had Coffees In The Past That Could Have Been IMO Better But The Roasting Was Not Proper, Maybe The Beans Were Bad, But When You Coffee Like I Do You Know And Have An Intimate Relationship With The Bean, After All This Is My Life.
I Shared This Coffee With My Family And No One Could Believe It Was Not My Own Personal Coffee. I'm My Biggest Coffee Critique, So I Always Use My Family, Whenever I Want Another Opinion About A Coffee. Of Course I Shared The Whole Gavina N Don Francisco's Family Legacy, That Made Everyone Even More Excited About The Exclusive Coffee They Were Drinking, It's All About Sipping. I Was Fortunate Enough To Receive 1 Of The 1000 Bags That Were Roasted. Don Franciscos Holiday Blend

I Will First Start By Saying I'm Not Much On Blended Coffees, Nor Preground Coffee, I Point These Two Thing Out Mainly Because The Both Have To Be Considered Carefully Because They Ultimately Affect The Outcome Of The Brew ;). Let's Get To It, Shall We?I Started Off By Brewing This Coffee The Same Method I Brew All Of My Personal Coffee In My Commercial Brewer, I Have A 2.2L Carafe So I Used The Same Measures That I Use. Upon Opening The Package I Was Greeted By A Nice Aroma, That Reminded Me Of Dark Spice Chocolate N Caramel Even Some Floral Notes. Yes I Was A Bit Overwhelmed With So Much Coming At Me, But It Was In A Good Way.
This Coffee Is A Blend Of Central N South American Coffees. I Will Be The 1st To Say It's Been A While Since I've Had Any Of Those Coffees. Now For The 1st Sip This Coffee Was Very Hard To Pin Point, Which All The More Makes For An Interesting Coffee Blend.I Will Only Give A General Experience Review Of What I Thought Of This Coffee. It's Definitely A Holiday Coffee, Heck A Great Breakfast Coffee Period. This Coffee Has Hints Of Carmel, Chocolate, Spices, Light Floral, Earthy. Really This Coffee Is That Intriguing, Like A Maze Or Puzzle. It Does Have A Bite, Not A Bitter One, Lets Say You Know Ur Drinking Coffee. Nice Coffee Aftertaste Of Smokiness Bliss. This Is A Definite Recommend For Coffee Lovers That Love That Strong Flavor Of Coffee. I'll Say This Coffee Is Strong Enough For A Man, But Also Intriguing Enough For A Woman. I Really Am Enjoying This Experience, While I Write. I Would Also Like To Mention Don Francisco Is 1 Of 3 Coffees That I Buy That Are Not My Own. What Makes PAN ROASTing Coffee Different ?

In An Attempt To Not Only Clear Up, But Also Explain The Madness Behind My Obsession With PAN Roasted Coffee. 1st I Would Like To Say This Method Isn't For Everyone, For One It Takes Lots Of Patience N Time, I'm Sorry Some Of Us Don't Have That. Relax Enjoy The Coffee, Some Things Are Still Made Good, The Old Fashioned Way. Remember When You Were Young When You Didn't Have A Care In The World? Well My Friend I Want U To Rewind Back Then And Have A Sip With Me, Provided You Have The Time. This Isn't A Job 4 Me, this Is A Passion, N A Celebration Of Me Living My Life. Now That You Get A Lil Bit Of The Picture I'm Trying To Paint, I'll Explain What Makes PAN Roasted Coffee Different. Meet Man vs Machine. It Is Important For Me To Say There Are Several Companies In The Coffee World I Admire. Who Knows Honestly I Can See My Name On Some Of Their Coffee Labels Guess I Have An Eye For The Future.I Will Always Own A PAN, But I Have Much Bigger Plans ;). Does Anyone Know The Perfect Person? If So I'd Like To Know Them Too! Well Truth Is Even Perfect Is A Matter Of Opinion Not Necessarily Based On Facts.With My PAN Roasting Methods I Don't Seek Perfection I Seek Uniqueness. In Short Coffee Is A Very Complex Beverage, I'll Leave All The Complexities N Number Figures To The Experts. Lets Say U Have 10 Coffee Beans And All Of Them Are The Same Bean Roasted The Same Way, That Would Make For A Uniformed Cup Of Coffee Right? Now Lets Say U Take 5 Of Those 10 Coffee Beans And Roast Each Of Them A Different Time, So Now You Have 1/2 Same & 1/2 Totally Abstract. Now Where Is The Uniformity Well Lets Say The Uniformity Equations Has Now Gotten Broader There Is Now Uniformity In The Total Batch Because They Are All Different But In Uniform Like People You See, Each Of My PAN Roasted Beans Has It's Own Voice, Even Though It Was In The PAN The Same Amount Of Time As All Others, The Results Can Never Be The Same Bean, Because I'm Not A Machine, So From A Complexity Stand Point PAN Roasted Coffee Should Be Harder To Pin Point Some Notes, Just Because Of The Way It's Process, That Doesn't Mean PAN Roasting Is Better, Just Means For All You Explores Out There That Like Being Adventurous Come On Over And Take A Trip On The Wild Side.
